To my taste buds, this is very similar to seitan, which I make about once a month. You would love my almond-cocodate nutshakes too, blend 1/3 part almonds to 2/3 filtered water, strain through muslin cloth, rinse blender, poor it back and fresh coconut water & medjool dates and blend a long time, then chill.
